THE Water's Edge Hotel, Rathmullan – a member of the hospitality collection Private Ireland and the most recent addition to the Blaney Group of hotels, celebrated the start of a new tourist season with a wonderful drinks reception and dinner in their well-appointed dining room overlooking Lough Swilly, Co. Donegal.
Assembled guests sampled the new season menu specially prepared by chef Michael Noonan as the sun set over the Donegal Hills.

Owners Neil and Mandy Blaney spoke of their gratitude to their staff for their continued loyalty and dedication, saying: "We are proud to always work as a team to bring the best in service and hospitality to this stunning part of Donegal".

As part of the Blaney Group, The Water's Edge has benefited from the taste and experience of Mandy Blaney, whose creative flair and attention to detail can be seen in every facet of the property, from the coral decorations in the guest bathrooms, to the inviting ships-deck lanterns in the main bar.

The hotel interior itself is bright and airy and immediately relaxing. Upon arrival, guests receive a warm Donegal welcome and carpeted floors and soft lighting from walls and overhead beams make for a soft and inviting atmosphere.

Undoubtedly it is the serene and truly spectacular landscape that provides the backdrop for this boutique hotel that leaves one awestruck.
For those seeking peace and solitude there is perhaps no location as idyllic as The Waters Edge. Often described as "simply stunning" these words are at the heart of everything this boutique hotel has to offer. Guests can gaze out on beautiful Lough Swilly; they can drift off into a peaceful sleep with the sound of waters lapping outside their room and awaken, refreshed, to a spectacular ocean sun rise.

The hotel restaurant and adjoining bar is set, as the name suggests, on the shoreline of Lough Swilly. The restaurant is a brand new conversion of an old building, where tables are set up simply and attractively, to captivate the stunning view. The menu offers a range of dishes divided evenly between meat and fish (Donegal sirloin steak or roast tail of monkfish), with something imaginative for vegetarians.

The restaurant's specialty, of course, lies in the wide variety of local fish and seafood caught fresh every day. A well-balanced wine list offers great value to diners and guest alike.

At the Water's Edge restaurant an A la-carte dinner menu is available from 6pm every evening and also on offer is a special midweek dinner menu from Monday to Thursday, 6.00pm to 10.00pm for just €40pp.
