Local chef Paula McIntyre is set to host a festive get-together in her garden barbecue shack with tour guide and author Lolly Spence, sports pundit Liam Beckett and mezzo-soprano Carolyn Dobbin.

If you have visitors dropping by over the Christmas season and are wondering what to cook for them, Paula has a few suggestions.

In this radio special, Paula has compiled a menu of some of the most popular Hamely Kitchen dishes which are perfect for any festive supper. On the menu is a delicious onion soup with a side of slow-cooked beef roozle breid tacos; smoked chicken with rumbledethumps, a dish from the Scottish borders of potatoes, cabbage and turnips; and for dessert there is Soor Dook or Buttermilk Cake with poached fruit.

Paula and guests Lolly, Liam and Carolyn will be sharing their stories of Christmas culinary successes and disasters and what they consider to be the essential items on a Christmas dinner plate. They will be giving the thumbs-up or thumbs-down to the Brussel sprout and Christmas pudding.

Lolly reveals some of the Ulster-Scots traditions associated with the festive season and mezzo-soprano Carolyn entertains everyone with her rendition of the well-loved carol The Holly and the Ivy plus a carol written by Hillsborough born songwriter Hamilton Harty.

Carolyn concludes the festive fun with a song especially written for and dedicated to Paula.

Paula’s Hamely Christmas Supper is on Sunday, December 18, BBC Sounds and BBC Radio Ulster at 6pm, and available now on BBC Sounds.
