Meet Arleneat the show

Arlene will be cooking up tasty recipes using local Northern Irish produce at the Ballymena show on Saturday 31 May. At the show, you can also sample our amazing, local Northern Irish sirloin steaks, perfectly cooked by ABP beef, Sainsbury’s beef supplier. Try serving your steak with this tasty couscous recipe made with roasted veg and feta cheese.

Roasted vegetable cous cous salad

Serves: 4 Preparation time: 5 minutes Cooking time: 25 minutes

400g pack Sainsbury’s Mediterranean vegetables

200g Sainsbury’s cous cous

300ml hot vegetable stock

3 tablespoons be good to yourself sweet balsamic dressing

80g Sainsbury’s Greek feta, crumbled

100g vine tomatoes, washed and quartered

¼ x 31g pack fresh coriander, washed, leaves picked and chopped

1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Tip the vegetables onto a baking tray and roast in the oven for 20-25 minutes, until tender.

2. Meanwhile, heat a dry frying pan until hot, add the cous cous and toast for 2-3 minutes, tossing the pan gently, until the grains go slightly golden. Transfer to a bowl and pour over the hot stock. Cover with clingfilm and set aside for 10 minutes.

3. Fluff up the cous cous grains with a fork, then stir through the dressing, feta, tomatoes, coriander and roasted veg. Season to taste.and serve.
